CHOW-CHOW RELISH

Description:
This delicious Southern Recipe adds delight to any sandwich, salad, sauce or snack. It contains the following ingredients:
Ingredients:
15 - Green tomatoes (cubed)
15 - Red tomatoes (cubed)
3 - Green peppers
3 - Red peppers
3 - Yellow peppers (If you desire it HOT, 1 Jalapeno Pepper may be added).
2 - Banana peppers (optional)
1 - Small head Green Cabbage
3 - White Onions (large)
2 - Celery stalks
4 - Cups White vinegar
2 lb. bag light Brown Sugar
Directions:
Grind the following ingredients, then add ¼ c of table salt, stir, and set aside for a few hours. Drain WELL before cooking. I used the ICE CRUSH on my blender. ADD small amounts at a time. Put into a crock bowl. Do not use aluminum utensils. Cook in a coated Teflon pot
To liquid mixture ADD: 2 tablespoons of celery seeds and 2 tablespoons of dry mustard. 1/4 cup Pickling spices placed in a cloth and tied. Add to the vinegar and sugar mixture. Boil the vinegar, brown sugar and spices to release the flavor about 10 minutes.
Taste the vinegar mixture for sweetness. If not sweet to taste, add WHITE sugar to taste. Place all the above in the hot vinegar mixture and cook for about 15 minutes.
Place in hot jars and seal with hot lids and rings.
